I bought this book at Walmart (paid a lot more for it there) and it was completely worth it. So far, I have tried a half dozen of the recipes, and ALL of them have been a huge success. One reviewer rights about how it is only restraunt selections..... false. At the bottom of each ORIGINAL recipe in here, they show what a restaurant alternative is, and how much money and calories you save by cooking at home. Also helpful in this book is new cooking tips and techniques. For example, as a southerner - I love fried foods. This book showed me how to "oven fry" foods to have that familiar taste and crispy outside without all the extra calories from submerging foods in hot grease. Other techniques in this book that have been helpful are how to braise meats and use the natural drippings to make your own sauces while cooking, increasing the natural flavor of dishes.

Slow Cooker Revolution Review

The "new" name is "slow cooker" but most of us know the device as a "crockpot" because that's the name it was first marketed under a couple of decades ago. If you're like me, you got one because you thought, "Hey, I can put in the ingredients in the morning and have a tasty meal when I get home from work - cool". Then you found out that only certain recipes seemed to work well in the crockpot, er, slow cooker. You bought crockpot cookbooks, and found while many of them were beautifully designed with multiple and elaborate fonts, blank spaces for notes, line drawings of cute little collections of vegetables, the recipes either contained about 20 different ingredients or else the recipe required so much pre-browning, pre-sautéing, post-blending, post-broiling of the ingredients that it would just be quicker to cook the darn recipe once you got home from work.
I am really happy to say that "Slow Cooker Revolution" is the first sensible slow cooker cookbook in my collection of them. The book is very well designed. There is a page devoted to each recipe, and most recipes have a picture of the finished product. There is a list of ingredients, and from what I saw, everything there is available in my local supermarket. Each recipe starts off with a paragraph entitled, "Why It Works", in which the authors explain the choices behind certain ingredients or methods and why they work better than others. The recipes are clear-cut and easy to follow. Each recipe also an additional segment - either a "quick prep tip" or a "smart shopping" hint or an "on the side" short recipe. They also recommend products in these segments that have been determined to be the best in their other test processes (if you've ever watched "America's Test Kitchen" on PBS you'll know the tests I'm talking about); I like that they name names of the products.
As I read through the recipes, I found myself thinking, "that sounds really tasty" and more importantly, "I can do that". The recipes include both standards and favorites, you know, the kind of food that you would actually cook at home (or order in a favorite restaurant) and that your family would actually eat. The recipes are not just reprints of older crockpot recipes; they have reworked some basics and created totally new versions of others. There is not a lot of elaborate pre-preparation in these recipes. Sensibly, they recommend using the microwave to pre-cook some of the vegetables to both make sure they'll cook thoroughly in the recipe and to release more of the aromatics into the recipe. We're talking like five minutes in the microwave, so that's no big hardship. Some of the recipes do call for browning or sautéing certain meats or vegetables; I suppose there is no real way to avoid that since the name of the game is adding flavor to a process whose innate nature would tend to lose the flavor of some ingredients due to the long cooking time. There are a number of recipes highlighted as "Easy Prep" - they are the ones that are basically "throw everything into the slow cooker and turn it on".
What I also like about this cookbook are the extras, the pages that highlight things you should know about the ingredients you're using, e.g. "All About Broths", "Pasta 101", "All About Beef", "All About Using The Microwave And The Slow Cooker", etc. Very useful. This cookbook is definitely going to be a keeper for me, and I might be buying some other copies for the other cooks in my family. This is a good and useful gifting item.

Modernist Cuisine: The Art and Science of Cooking Review

In the interest of full disclosure, I had access to a free electronic review copy from the publisher prior to receiving my (unfortunately NOT free) copy from Amazon.com, and I work for an organization mentioned a few times in the book (eGullet).

It's hard to review this book without it coming across as hyperbolic: after all, it's a 50-pound, 2400-page beast that will cost you an entire year's cookbook budget and must have cost unfathomable sums to produce; you're either going to love it or hate it. However, I can say with confidence that if you liked McGee's On Food and Cooking: The Science and Lore of the Kitchen, you are going to love Modernist Cuisine.
While the press coverage of the book so far has focused on the more esoteric aspects of the book--centrifuges, rotovaps and chemicals, oh my!--the book actually simply treats those items on equal footing with woks, sauté pans, and water. It covers them because you can cook interesting, tasty food with them. Of course, the weird stuff gets all the attention, because, well... it's weird. But this is a book that devotes an entire chapter to *water*. And the things it teaches you *will* make you a better cook. The authors are never satisfied with "it just works, don't ask why." It seems like every paragraph, on every detail, is tightly focused on the question of not just "what happens?" or "how do you do it?" but also "WHY does it work?" and "HOW does it work?" This book is particularly excellent if you are science-minded, but it is written with such clarity that I believe anyone can learn these things from it. Who knew that blowing on a spoonful of soup to cool it was so complicated, and so interesting?
Probably the most relevant criticism I have encountered is the notion that the recipes it presents are unapproachable. And a few things do, in fact, require a centrifuge (though the majority of the time it is an optional step). There is no doubt that many if not most of the recipes require ingredients that standard American kitchens don't stock. Most of us don't have Agar and Xantham Gum in our cupboards, and some find the very idea of cooking with "chemicals" a frightening, foreign, or downright objectionable practice. Truth be told these "chemicals" are no more (or less) unnatural than baking soda or refined sugar (the book spends a great deal of time discussing food safety and nutrition before diving into the "crazy chemicals"). Amazon even sells a starter kit that I've found quite useful: Experimental Kit Artistre - 600 grams. And for the most part these ingredients are not used "just for fun": the goal of the Modernist Cuisine movement is to examine the foods we eat, and our perceptions of that food, and try to make things that taste great, and perhaps even engage us on an intellectual and emotional level. I've made a few recipes from the book so far, and in particular the Mac & Cheese was astonishing: it is far and away the best M&C I've ever had or made, without question. It actually tastes like cheese! (What a concept, I know). And it's easier to make and more forgiving than the traditional béchamel-based method. So some of the recipes are simple, and some are complicated. If you have Alinea you probably have a pretty good idea of what the complicated ones look like: daunting, yes, but *not* unachievable if you are willing to put the time in.
Obviously a review of a 2400-page book could go on more or less forever, but I think the upshot is this: if you are interested in learning the "how" and "why" of cooking, of even the most mundane processes (they cover boiling water in great detail), this book is probably deserving of six stars; it is simply monumental. Save your pennies, this is a worthwhile purchase. If, on the other hand, that is *not* interesting to you, it's probably two stars: get the first and second volumes from a local university library, and don't worry about the rest (if you are only going to read the first two volumes I'd say it's tough to justify the price tag).

Joy of Cooking: 75th Anniversary Edition - 2006 Review

Originally a self-published book in 1931, and no less than nine revisions later, this thick volume of recipes (it's got to be at least 3 inches thick) is a great addition to anyone's cook book library.
But wait! This book is not merely just a collection of recipes- although with 4000 classic recipes and an additional 500 new ones, that would make it worth buying alone. No, this cook book stands heads and shoulders above the rest because its what I call a "teaching" cook book. It contains recipes for just about every dish or food category you can think of which are arranged in various sections throughout the book. Then, at the beginning of each chapter, there is a kind of introduction which goes into detail about that category. For example, the section on grains starts off with an almost encyclopedic explanation of the types of grains, their anatomy, how to combine them, and so on.
A handy, informative cook book with plenty of choices, there is sure to be something for everyone and even healthy eaters will find a great section on what makes up a healthy diet, how many calories you need, etc. Also recommend The Sixty-Second Motivator for readers who need more motivation to eat healthier and have trouble changing their diet habits.

I recently inherited a lower end store bought juicer ( Juiceman, it is a very nice starter model, btw.). I ordered up a handful of juicing books through my library system and 'The Big Book of Juices & Smoothes' came in first not only to my house but the first for ease of use, layout & design and understanding. It is layed out according to the main product you want to use, say you have a bunch of carrots as the main ingredient, you go to that section. It is all well thought out.
After just a week of juicing for breakfast and an afternoon snack, I have to say that I am hooked and look forward to trying veggies and fruits of the exotic nature that were eschewed before due to the " How do I prepare this?" factor.
Natalie Savona has a way of mixing together fruits and veggies that would normally make you think, " Ugh...that sounds awful." but after trying a few root veggies and citrus fruit combos of hers, I've found her little comments about each drink are spot on.
Under every recipe is a Star Chart that rates the following:
Energy, Detox, Immuinity, Digestion and Skin. One to Five star rating of what exactly that recipe will help you in whatever area you feel you need. This is very nice as you can flip right through the book when you have a raging cold and look for the 5 Star Ratings on Immunity to see what produce you have on hand to help nourish your body.
An example of a recipe: #130 Easy Morning
3 carrots
1 apple
1/2 orange
1 stick of celery
1/2 inch of ginger root.
I prefer this now over regular orange or apple juice in the morning. So do my kids, who are 7 and 5. They also enjoy putting the fruit into the juicer and watching it get pulverized. YAY!
The plus side of juicing is taking out the pulp mush and putting it into your compost. It's a win-win situation, really. Good for you. Good for the Earth. YMMV :)
I liked this book so much, I am buying it after a very satisfying test drive from the library system.
