Food Rules: An Eater's Manual Review

It is amazing how complicated we have allowed our diets, and our understanding of our diets, to become. Even Pollan's most recent book In Defense of Food: An Eaters Manifesto - which seemed to be a pretty simple premise - ended up being a (wonderfully) complicated journey through our food system. So when I read that this book was coming out, I wondered if it was necessary given the wealth of information already covered. The answer is: yes, this book is necessary.
While there are a million other guides to a healthy diet running around out there, few manage to boil down the essentials in such a usable way. Pollan takes the essential and fascinating information that he wrote about in his previous book and simmers it down into a succinct (the book is basically 70 half pages long) "manual" of rules for eating. While this book retains some of the bones of its predecessor, it is by no means a Cliff's Notes version. This manual is essential reading all on its own.
Food Rules is broken down into 3 sections (and this will sound familiar to those that read In Defense of Food): 1- What should I eat? (Eat food) 2 - What kind of food should I eat? (Mostly plants) and 3 - How should I eat? (Not too much). Each section includes 20 or so rules that you can pick and choose from in order to eat a healthy diet. Some of the rules overlap (Avoid food products that contain ingredients that a third-grader cannot pronounce and Avoid ingredients that no ordinary human would keep in the pantry, for instance) and some seem like such common sense that it is almost laughable to include them, but that is why this manual is so important. It distills all of this complex information that we see and hear every day and turns it into something relatable. We know, somewhere in our minds, that certain grains and oils are better than others. Pollan gives us an easy rule to help know which ones are best. We know that most breakfast cereals are little more than desserts and Pollan gives us an easy rule to know which ones are safe. Some rules are humorous (it's not food if it arrived through the window of your car) and some are serious; some rules are easy and others require a bit more dedication. But what this manual has is a wide range of useful tips that can be applied to any life at any time. This is no complicated diet; this is a little pocket book of sensible, realistic rules to help you eat your best.

Salt: A World History Review

It's become a party cliche to comment on our need for the results of combining a poisonous gas [chlorine] and a volatile metal [sodium]. Kurlansky passes quickly over such levity to seriously relate the role of sodium chloride in human society. While at first glance his account may seem overdone, a bit of reflection reveals that something so common in our lives is easily overlooked. Salt is essential to our existence. Our need is so strong and enduring that we tend to take its availability for granted. As a global history, this book is an ambitious attempt to re-introduce us to something we think common and uninteresting. It's immensely successful through Kurlansky's multi-faceted approach. He combines economics, politics, culinary practices, tradition and myth in making his presentation. About the only aspect ignored is the detailed biological one explaining why this compound is so necessary to our existence.
Because our need for salt is so fundamental, its history encompasses that of humanity. Salt was basic to many economies, Kurlansky notes. It's acted as the basis of exchange between traders, was the target of empire builders and even paid out to soldiers as a form of "salary" - hence the term. Venice, a coastal city tucked away from the main tracks of Mediterranean trade, bloomed into prominence when it discovered it could garner more profit by trading in salt than by manufacturing it. The Venetian empire and later renaissance was founded on the salt trade.
Empires may be built on salt, but can be felled by misguided policies on its trade and consumption. One element leading to the downfall of the French monarchy was the hated "gabelle", or salt tax, which imposed a heavier burden on farming peasants than it did on the aristocracy. The reputation of tax evasion borne by the French relates to the resentment expressed over the salt tax. A British regulation on salt resulted in similar reaction leading to the breakup up their own Empire. It was a "march to the sea" led by Mahatma Ghandi to collect salt that galvanised resistance to British rule. Over a century after the French Revolution, the British were displaced from India for similar reasons - greed.
While acknowledging the importance of salt in our lives, Kurlansky notes that determining how much is "too little" or "too much" is elusive. Many people today claim to have "salt-free" diets while remaining ignorant of how much salt is contained in our foods, both naturally and through processing. Yet, as Kurlansky records, salt has appeal beyond just the body's needs. He records numerous commentators from ancient Egypt, China and Rome who express their admiration for salt's flavour-adding qualities. Sauces based on various ingredients mixed with salt permeate the book. He notes that the salt dispenser is a modern innovation, supplementing the use of salt in cooking processes.
Salt's decline in conserving food, which changed the amount of salt we consume directly, came about due to increased world trade, displacement of rural populations into cities, and, of course, war. "The first blow" displacing salt as a preservative came from a Parisian cook; a man so obscure that his given name remains disputed. Nicolas [Francois?] Appert worked out how to preserve meat by "canning". Adopted by Napoleon's armies, the technique spread rapidly. The technology of the Industrial Revolution led to effective refrigeration. Kurlansky gives an account of Clarence Birdseye's efforts to found what became a major industry.
Although the topic seems overspecialised, the universal application and long historical view of this book establishes its importance. Kurlansky has successfully met an immense challenge in presenting a wealth of information. That he graces what might have been a dry pedantic exercise with recipes, anecdotes, photographs and maps grants this book wide appeal. He's to be congratulated for his worldly view and comprehensive presentation. [stephen a. haines - Ottawa, Canada]

Four Fish: The Future of the Last Wild Food Review

I love seafood. However, I live in arid West Texas, a place where good seafood is nonexistent, for both geographic and cultural reasons. What passes for a seafood restaurant here is (shudder) Red Lobster, and the fishmongers at local grocery stores just give you a blank stare when you ask about wild-caught Copper River salmon. Despite these difficulties, I am very (perhaps perversely) interested in the natural history of the seafood that is impossible for me to get, and Paul Greenberg's "Four Fish: The Future of the Last Wild Food" is appetizer, main dish and dessert for curious pescetarians.
The four fish of the title are salmon, bass, tuna and cod, which are today the world's dominant wild-caught and farmed fish. Mr. Greenberg devotes a long chapter to each of these finned culinary staples. He ties their stories together by showing how each represents one discrete step that humanity has taken, sometimes over hundreds or thousands of years, to increase and control the tasty, nutritious largess of the sea. Salmon, for example, depend on clean, cold, free-flowing freshwater rivers, and was likely the first fish that early northern-hemisphere humans exploited. Sea bass, which inhabit shallow waters close to shore, were the catch of choice when Europeans first learned how to fish in the ocean. Cod live further out, off the continental shelves many miles offshore, and were the first fish subject to industrial-scale fishing by mammoth factory ships. Tuna live yet further out, in the deep oceans between the continents, and represent the last food fish that has not yet been "domesticated."
Mr. Greenberg uses footnoted historical and scientific information from academic reports and other sources, as well as his personal experiences and interviews with some colorful fishing industry characters, to build detailed and informative pictures of the state of these four fish in the world today. These are factual, balanced treatments of subjects that are practically guaranteed to set environmentalists, government regulators, fishermen and consumers at each others' throats in the dynamic, complicated world of modern large-scale aquaculture. He shows how issues such as sustainability, wild-caught vs. farmed fish, the environmental effects of fish farms, growth in consumer demand, concentrations of harmful pollutants in fish, etc., are all interrelated in an incredibly complex web of dependencies. Easing one problem invariably worsens others, and there are really no easy answers to the question of how we can best manage our production and consumption of these four fish to assure their safety, availability and future viability.
It's not a hopeless future. Mr. Greenberg offers some things we can do to mend our troubled relationship with the oceans and the life within them. Whether you agree with his conclusions or not, you should still find "Four Fish: The Future of the Last Wild Food" to be an interesting and informative read. I recommend it highly if you have the slightest interest in finding out more about the fish on your plate.

Put bluntly; killing and butchering animals is not a pleasant business. Anyone who has hunted or helped slaughter on a farm can attest to this. You just have to jump in and do it.
Ironically, or perhaps most fittingly, this book was written by a veterinarian. I had a couple of chuckles about that fact.
This is a very "how to" book, so is really not meant to be casually read. The information provided is practical and well presented to make the process easier.
The author handles what some may consider a sensitive subject with honesty and straight-forward thinking. He also provides numerous tips and how-tos when it comes to handling and butchering several different kinds of animals.
While every hunter may not need this book, it sure provides a lot of help and suggestions. If you are going to be butchering a wide variety of animals (pigs, cows, deer, etc.), this is definitely the book for you.

This is such a FUN book. It is a story about love, deception, family, tradition and... COOKING!
I fell in love with the characters, and was very happy to see leading ladies everywhere!
It was also very nice to be able to have a quick look at old fashioned recipes, and understand the process of creating them.
Finally, this book has enough drama, love and tragedy for a movie... and Im very happy it became one, which, by the way is also very good, and captures the real essence of the book.

What's better for you --- whole milk, 2% milk or skim?
Is a chicken labeled "free range" good enough to reassure you of its purity? How about "grass fed" beef?
What form of soy is best for you --- soy milk or tofu?
About milk: I'll bet most of you voted for reduced or non-fat. But if you'll turn to page 153 of "In Defense of Food," you'll read that processors don't make low-fat dairy products just by removing the fat. To restore the texture --- to make the drink "milky" --- they must add stuff, usually powdered milk. Did you know powdered milk contains oxidized cholesterol, said to be worse for your arteries than plain old cholesterol? And that removing the fat makes it harder for your body to absorb the fat-soluble vitamins that make milk a valuable food in the first place?
About chicken and beef: Readers of Pollan's previous book, "The Omnivore's Dilemma", know that "free range" refers to the chicken's access to grass, not whether it actually ventures out of its coop. And all cattle are "grass fed" until they get to the feedlot. The magic words for delightful beef are "grass finished" or "100% grass fed".
And about soy...but I dare to hope I have your attention by now. And that you don't want to be among the two-thirds of Americans who are overweight and the third of our citizens who are likely to develop type 2 diabetes before 2050. And maybe, while I have your eyes, you might be mightily agitated to learn that America spends $250 billion --- that's a quarter of the costs of the Iraq war --- each year in diet-related health care costs. And that our health care professionals seem far more interested in building an industry to treat diet-related diseases than they do in preventing them. And that the punch line of this story is as sick as it is simple: preventing diet-related disease is easy.
In just 200 pages (and 22 pages of notes and sources), "In Defense of Food" gives you a guided tour of 20th century food science, a history of "nutritionism" in America and a snapshot of the marriage of government and the food industry. And then it steps up to the reason most readers will buy it --- and if you care for your health and the health of your loved ones, this is a no-brainer one-click --- and presents a commonsense shopping-and-eating guide.
If you are up on your Pollan and your Nina Planck and your Barbara Kingsolver, you know the major points of the "real food" movement. But if you're new to this information or are disinclined to buy or read this book, let me lay Pollan's argument out for you:
-- High-fructose corn syrup is the devil's brew. Do yourself a favor and remove it from your diet. (If you have kids, here's a place to start: Heinz smartly offers an "organic" ketchup, made with sugar.)
-- Avoid any food product that makes health claims --- they mean it's probably not really food.
-- In a supermarket, don't shop in the center aisles. Avoid anything that can't rot, anything with an ingredient you can't pronounce.
-- "Don't get your fuel from the same place your car does."
-- "You are what you eat eats too." Most cows end their days on a diet of corn, unsold candy, their pulverized brothers and sisters --- yeah, you read that right --- and a pharmacy's worth of antibiotics. And they bestow that to you. Consider that the next time there's a sale on sirloin.
-- "Eat food. Not too much. Mostly plants." By which Pollan means: Eat natural food, the kind your grandmother served (and not because she was so wise, but because the food industry had not yet learned that the big money was in processing, not harvesting). Use meat sparingly. Eat your greens, the leafier and more varied the better.
In short: Kiss the Western diet as we know it goodbye. Look to the cultures where people eat well and live long. Ignore the faddists and experts. Trust your gut. Literally.
In all this, Pollan insists that you have to save yourself. And he makes a good case why. Our government, he says, is so overwhelmed by the lobbying and marketing power of our processed food industry that the American diet is now 50% sugar in one form or another --- calories that provide "virtually nothing but energy." Our representatives are almost uniformly terrified to take on the food industry. And as for the medical profession, the key moment, Pollan writes, is when "doctors kick the fast-food franchises out of the hospital" --- don't hold your breath.
"You want to live, follow me." I loved it when Schwarzenegger said that in "Terminator." It matters much more when, in so many words, Michael Pollan delivers that same message in "In Defense of Food."

This book is very practical and easy to understand. It's more encyclopedic in style rather than conversational, so if you aren't sure that you'll be saving seeds from your garden this year, you'll probably find it kind of boring. If you are slightly interested but unconvinced, I would recommend Carol Deppe's "How to Breed Your Own Vegetable Varieties" instead. Her enthusiasm for the subject carries over into her writing style, and she includes lots of entertaining anecdotes and information that will be useful even if you don't decide to save seeds.
But if you know you want to start saving seeds, or enjoy saving seeds and want to get better, this book will be indespensable.
The book is mostly about vegetables, with a few grains and herbs also described. For each type of garden plant, several topics are covered:
--A general description (where it originated, how it is used in different cultures, etc.)
--Botanical classification
--Pollination (such as wind vs. insects), crossing and isolation
--Seed production and harvesting
--Seed statistics (% germination, how many seeds in an ounce, how many varieties offered in major catalouge)
--How to grow the plant from seed
--Regional growing recommendations for 5 very generalized regions (Mid-Atlantic, Southeast/Gulf Coast, Upper Midwest, Southwest, Central West Coast, Maritime Northwest) These are very brief, but useful.
I wish I would have gotten the book sooner, because I don't have too much gardening experience and I would like to have a big garden (well, as big as my yard will allow...) The regional recommendations often include when you should plant a vegetable indoors and when to transplant or direct seed outdoors. It would have been nice to do the last few week's seed starting with a little less guesswork.

I really wanted to like this book. I liked the Poisonwood Bible, I like to grow vegetables, I shop at the farmer's market, and I have joined a CSA. It is, therefore, with a sense of disappointment that I write this review. The narrative elements, with stories of raising chickens, breeding turkeys, and feeding friends and family, were all enjoyable. If only the author could have gotten over herself and her vegetable adventure.
First, for two individuals with training in science, the author and her husband supply appallingly little documentation for all of the "facts" they dispense about the costs and hazards of modern agriculture. Just one reference would have been helpful - at least I would have known that they tried, rather then just relied on rumor and hearsay. They may be correct, but any scientist will tell you that unsupported data is no data at all. Secondly, the occasional jabs at both American culture and religion frankly had the effect of making me dislike the author, as she chose to insult a large part of who I, and many of those I associate with, am.
To say that the United States has no unified food culture is disingenuous at best. Given that most Americans trace their heritage to somewhere else, it is not surprising that they don't all share a similar culinary heritage. During our family's trips to Italy, we have thoroughly enjoyed the local cuisine, but while the depth may be great, the breadth is much more restricted. That's great in Italy. When I go to New York or Dallas or San Francisco, I have the option to try many, many different cultures' foods, and sometimes a creative blending of more than one. That IS our food culture, not some monolithic "fast food nation."
In summary, this book was a chance to talk about the opportunities that growing-your-own and locally grown food present, but the author let her own petty gripes get in the way and left a bad taste in this reader's mouth.

Two different people sent me copies last week of Michael Pollan's book, The Botany of Desire. I'm a writer (Allergy-Free Gardening, from Ten Speed Press) myself and a lifetime horticulturist and I guess they figured I'd appreciate this book. They were right too. I found this book extremely hard to put down. Pollan is a writer first and a botanist second but he is remarkably observant about horticultural matters. He is also unusually talented at explaining complex ideas and he does so in a way that is fresh, fun, often funny, and suprisingly profound. Pollan's section on Johnny Appleseed alone is worth the price of the book. Here Johnny is a multi-dimensional character, one not just eccentric, but a shrewd fellow with great vision and considerable human frailty. The Botany of Desire is chiefly the history of the tulip, apples in America, cannabis, and the potato. This may not sound like the recipe for a really satisfying read, but in Michael Pollan's more than able hands, it certainly is. If you enjoy gardening, history, or just plain old very decent writing, I expect you too would appreciate this excellent book.

In this book, Anthony Bourdain, executive chef at New York's Brasserie Les Halles, takes us on a wild ride through that city's food supply industry that includes surprises such as heavy drinking, drugs, debauchery, Mafiosi and assorted seedy personalities.
It is clear that Bourdain enjoys a true passion for both food and cooking, a passion he inherited from the French side of his family. He tells us he decided to become a chef during a trip to southwestern France when he was only ten years of age and it is a decision he stuck to, graduating from the Culinary Institute of America.
Kitchen Confidential is a surprisingly well-written account of what life is really like in the commercial kitchens of the United States; "the dark recesses of the restaurant underbelly." In describing these dark recesses, Bourdain refreshingly casts as many stones at himself as he does at others. In fact, he is brutally honest. There is nothing as tiresome as a "tell-all" book in which the author relentlessly paints himself as the unwitting victim. Bourdain, to his enormous credit, avoids this trap. Maybe he writes so convincingly about drugs and alcohol because drugs and alcohol have run their course through his veins as well as those of others.
The rather raunchy "pirate ship" stories contained in this fascinating but testosterone-rich book help to bring it vividly to life and add tremendous credibility. The book does tend to discourage any would-be female chefs who might read it, but that's not Bourdain's fault; he is simply telling it like it is and telling it hilariously as well.
In an entire chapter devoted to one of the lively and crude characters that populate this book, Bourdain describes a man named Adam: "Adam Real-Last-Name-Unknown, the psychotic bread-baker, alone in his small, filthy Upper West Side apartment, his eyes two different sizes after a 36-hour coke and liquor jag, white crust accumulated at the corners of his mouth, a two-day growh of whiskers--standing there in a shirt and no pants among the porno mags, the empty Chinese takeout containers, as the Spice channel flickers silently on the TV, throwing blue light on a can of Dinty Moore beef stew by an unmade bed." Apparently Bourdain made just as many mistakes at the beginning of his career as did Adam, but the book however, doesn't always paint and bleak picture.
Another chapter entitled "The Life of Bryan," talks about renowned chef Scott Bryan, a man, who, according to Bourdain, made all the right decisions. Bourdain describes Bryan's shining, immaculate kitchen, his well-organized and efficient staff. It's respectful homage, but somehow, we feel that Bourdain, himself, will never be quite as organized as is Bryan, for Bourdain is just too much of the rebel, the original, the maverick.
Kitchen Confidential can be informative as well as wickedly funny. Bourdain is hilarious as he tells us what to order in restaurants and when. For instance, we learn never to eat fish on Mondays, to avoid Sunday brunches and never to order any sort of meat well-done. And, if we ever see a sign that says, "Discount Sushi," we will, if we are smart, run the other way as fast as we possibly can.
Kitchen Confidential isn't undying literature but it's so funny and so well-written that no one should care. It made me hungry for Bourdain's black sea bass crusted in sel de Bretagne with frites. It also made me order his novel, Bone in the Throat. If it is only half as funny and wickedly well-written as is Kitchen Confidential it will certainly be a treat.

I bought Rocco's Now Eat This book last year. The recipes were so amazing that I started losing 3 pounds a week! This is a terrific book, and it solved my perpetual problem of what to give people I know well enough to go to their wedding but not well enough to drop $800 on a wedding present. The recipes in this book make great ice cream. Toss in a decent ice cream maker, and you have a present that no one else will think of, that the receipients will appreciate, and one that they will use over time. (For what it's worth, I usually give the Donvier hand-turned machine because it makes dense, smooth ice cream that reminds me of gelato.)
Anyway, about the book and what makes it so great: Ben and Jerry tell you how to make their most popular ice creams, and a bunch that I never saw before. They provide multiple recipes for chocolate ice cream, and write clearly about how they are different. A friend of mine once made all the choclate ice creams and had a tasting party. It was interesting to see how different they really were. (And this book taught me the secret to great chocolate ice cream taste: a pinch of salt--really!)
If you are worried about using eggs, you will want to use a pasteurized egg product in place of the raw eggs. Other than that, this is a terrific book. Lots of good ideas, excellent recipes, and enough discussion about how to create new flavours to encourage even the most reluctant recipe-inventor to go hog wild.
I wish there were a sequel.

I didn't think it was possible to be disappointed with anything Ina Garten is associated with, but I guess there's a first time for everything. I loved her last book (Back to Basics), but this one just fell flat for me for a few reasons:
1. The recipes aren't neccesarily easy, especially when you have to search for some of the special ingredients (duck fois gras, Tate's Bake Shop chocolate chip cookies, Fox's U-Bet chocolate syrup, etc.). Also, "good ketchup such as Stonewall Kitchen"?!? There were just too many instances of blatantly trying to advertise other people's products. I think the only people who will have no trouble finding these specialized ingredients live in New York City, East Hampton or near a Whole Foods store (which for me is a 2 hour drive).
2. Some of the tips are not realistic for regular cooks, especially in these tough economic times (having 2 dishwashers!?!?!). Sure, I'd love to have 2 dishwashers in my kitchen, but unless you regularly host dinner parties with > 10 people or you run a catering business out of your house, what's the point? And who has room in their kitchen for that?
3. Unlike Ina's other books, none of the recipes here made me want to drop what I was doing and start cooking. Also, Ina's other books have included a chapter on breakfast foods, so I was sad when I saw that this book did not.
The book was not a total disappointment. As always, the pictures and layout of the book were beautiful (although I didn't understand the full page individual photos of each of Ina's friends). Also, some recipes, such as Lemon Chicken Breasts, Ultimate Peach Ice Cream and Old Fashioned Banana Cake are really good.
I'm still a big Ina fan and I'll continue to buy her books. I guess not everyone can hit a homerun everytime they step up to the plate.

Its a nice book with a humorous voice. It provides a short history of how the sauce came to be ubiquitous (I didn't know it is made in LA with jalepenos - assumed it was imported with more exotic chiles) which you could probably find on wikipedia.
If you already know how to cook you don't really need this book, because its basically a lot of fairly straightforward American dishes with Sriracha sauce added. It is not a Thai cookbook, or a Vietnamese cookbook. The recipes are for dishes like mac and cheese, chili con carne, chicken wings, chowder, hamburgers, cheese logs! etc. There were a few more inventive recipes - esp. the salads and cocktails. My biggest takeaway will likely be Sriracha butter on popcorn.
This book is best suited for someone who isn't a confident cook and loves Sriracha. Or someone who adores Sriracha and is looking for a few new ideas. Or someone who likes quirky cookbooks.

In the interest of full disclosure, I had access to a free electronic review copy from the publisher prior to receiving my (unfortunately NOT free) copy from Amazon.com, and I work for an organization mentioned a few times in the book (eGullet).

It's hard to review this book without it coming across as hyperbolic: after all, it's a 50-pound, 2400-page beast that will cost you an entire year's cookbook budget and must have cost unfathomable sums to produce; you're either going to love it or hate it. However, I can say with confidence that if you liked McGee's On Food and Cooking: The Science and Lore of the Kitchen, you are going to love Modernist Cuisine.
While the press coverage of the book so far has focused on the more esoteric aspects of the book--centrifuges, rotovaps and chemicals, oh my!--the book actually simply treats those items on equal footing with woks, sauté pans, and water. It covers them because you can cook interesting, tasty food with them. Of course, the weird stuff gets all the attention, because, well... it's weird. But this is a book that devotes an entire chapter to *water*. And the things it teaches you *will* make you a better cook. The authors are never satisfied with "it just works, don't ask why." It seems like every paragraph, on every detail, is tightly focused on the question of not just "what happens?" or "how do you do it?" but also "WHY does it work?" and "HOW does it work?" This book is particularly excellent if you are science-minded, but it is written with such clarity that I believe anyone can learn these things from it. Who knew that blowing on a spoonful of soup to cool it was so complicated, and so interesting?
Probably the most relevant criticism I have encountered is the notion that the recipes it presents are unapproachable. And a few things do, in fact, require a centrifuge (though the majority of the time it is an optional step). There is no doubt that many if not most of the recipes require ingredients that standard American kitchens don't stock. Most of us don't have Agar and Xantham Gum in our cupboards, and some find the very idea of cooking with "chemicals" a frightening, foreign, or downright objectionable practice. Truth be told these "chemicals" are no more (or less) unnatural than baking soda or refined sugar (the book spends a great deal of time discussing food safety and nutrition before diving into the "crazy chemicals"). Amazon even sells a starter kit that I've found quite useful: Experimental Kit Artistre - 600 grams. And for the most part these ingredients are not used "just for fun": the goal of the Modernist Cuisine movement is to examine the foods we eat, and our perceptions of that food, and try to make things that taste great, and perhaps even engage us on an intellectual and emotional level. I've made a few recipes from the book so far, and in particular the Mac & Cheese was astonishing: it is far and away the best M&C I've ever had or made, without question. It actually tastes like cheese! (What a concept, I know). And it's easier to make and more forgiving than the traditional béchamel-based method. So some of the recipes are simple, and some are complicated. If you have Alinea you probably have a pretty good idea of what the complicated ones look like: daunting, yes, but *not* unachievable if you are willing to put the time in.
Obviously a review of a 2400-page book could go on more or less forever, but I think the upshot is this: if you are interested in learning the "how" and "why" of cooking, of even the most mundane processes (they cover boiling water in great detail), this book is probably deserving of six stars; it is simply monumental. Save your pennies, this is a worthwhile purchase. If, on the other hand, that is *not* interesting to you, it's probably two stars: get the first and second volumes from a local university library, and don't worry about the rest (if you are only going to read the first two volumes I'd say it's tough to justify the price tag).

Author and food writer Barry Estabrook takes us on a journey to discover why those perfect-looking tomatoes piled up on supermarket shelves are so oddly tasteless, and believe me, the answer isn't very appetizing. Flavor, though, is the least of his concerns. The big story here is the human suffering -- right under our noses -- that we unknowingly perpetuate each time we pick a tomato up and put it in our shopping cart. It took courage to sniff this story out. Estabrook is clearly a pro in his field and deserves a great deal of credit. The writing is engrossing and at times hilarious, all of which makes the heartbreak a little easier to stomach.

I buy a lot of cookery books, and borrow even more from the library. Most of them are getting quite interchangeable these days. Yotam Ottolenghi's new book however has nothing I've seen in other books. All the recipes are fresh and original, but not difficult or fiddly. I have spent the last few years tearing his recipes out of the Guardian at the weekend, now I don't have to. His recipes work, are full of flavour, and as I said before quite different. An excellent book even for someone who has hundreds of cookery books.

I recently added this book to my cookbook collection, which numbers more than 1,000 volumes (probably more like 1200 but I'm still cataloging). It has immediately become one of my favorites (and definitely my #1 favorite in English). If you are a serious cook, love to read cookbooks like novels, and view recipes as suggestions rather than as requiring strict adherence to precise measurements, then this is the book for you! (Did I say I LOVE this book?)
I make all of the desserts for my husband's restaurant. If I snag some particularly luscious fruit and want to make it into a dessert, this is the book I reach for first. I don't WANT to be told how to make a fruit sorbet. I already know how. But I love having a list of suggested flavors and products that go with what I already have. It's like having an uber-creative friend at your side saying "hey, why not try THIS?"
And if you are not an experienced cook, this book provides invaluable guidance that a recipe book never could. It is wholly different from every food book I have ever read.
The book is clever, useful, and obviously the product of prodigious research. To the authors, I send my humble gratitude. You have made my life immeasurably easier, and my dishes far more interesting than ever before.
This book is a must-read if you love to eat or love to cook. I have already bought six copies and have given two as gifts. It's THAT good.
