In Defense of Food: An Eater's Manifesto Review

What's better for you --- whole milk, 2% milk or skim?
Is a chicken labeled "free range" good enough to reassure you of its purity? How about "grass fed" beef?
What form of soy is best for you --- soy milk or tofu?
About milk: I'll bet most of you voted for reduced or non-fat. But if you'll turn to page 153 of "In Defense of Food," you'll read that processors don't make low-fat dairy products just by removing the fat. To restore the texture --- to make the drink "milky" --- they must add stuff, usually powdered milk. Did you know powdered milk contains oxidized cholesterol, said to be worse for your arteries than plain old cholesterol? And that removing the fat makes it harder for your body to absorb the fat-soluble vitamins that make milk a valuable food in the first place?
About chicken and beef: Readers of Pollan's previous book, "The Omnivore's Dilemma", know that "free range" refers to the chicken's access to grass, not whether it actually ventures out of its coop. And all cattle are "grass fed" until they get to the feedlot. The magic words for delightful beef are "grass finished" or "100% grass fed".
And about soy...but I dare to hope I have your attention by now. And that you don't want to be among the two-thirds of Americans who are overweight and the third of our citizens who are likely to develop type 2 diabetes before 2050. And maybe, while I have your eyes, you might be mightily agitated to learn that America spends $250 billion --- that's a quarter of the costs of the Iraq war --- each year in diet-related health care costs. And that our health care professionals seem far more interested in building an industry to treat diet-related diseases than they do in preventing them. And that the punch line of this story is as sick as it is simple: preventing diet-related disease is easy.
In just 200 pages (and 22 pages of notes and sources), "In Defense of Food" gives you a guided tour of 20th century food science, a history of "nutritionism" in America and a snapshot of the marriage of government and the food industry. And then it steps up to the reason most readers will buy it --- and if you care for your health and the health of your loved ones, this is a no-brainer one-click --- and presents a commonsense shopping-and-eating guide.
If you are up on your Pollan and your Nina Planck and your Barbara Kingsolver, you know the major points of the "real food" movement. But if you're new to this information or are disinclined to buy or read this book, let me lay Pollan's argument out for you:
-- High-fructose corn syrup is the devil's brew. Do yourself a favor and remove it from your diet. (If you have kids, here's a place to start: Heinz smartly offers an "organic" ketchup, made with sugar.)
-- Avoid any food product that makes health claims --- they mean it's probably not really food.
-- In a supermarket, don't shop in the center aisles. Avoid anything that can't rot, anything with an ingredient you can't pronounce.
-- "Don't get your fuel from the same place your car does."
-- "You are what you eat eats too." Most cows end their days on a diet of corn, unsold candy, their pulverized brothers and sisters --- yeah, you read that right --- and a pharmacy's worth of antibiotics. And they bestow that to you. Consider that the next time there's a sale on sirloin.
-- "Eat food. Not too much. Mostly plants." By which Pollan means: Eat natural food, the kind your grandmother served (and not because she was so wise, but because the food industry had not yet learned that the big money was in processing, not harvesting). Use meat sparingly. Eat your greens, the leafier and more varied the better.
In short: Kiss the Western diet as we know it goodbye. Look to the cultures where people eat well and live long. Ignore the faddists and experts. Trust your gut. Literally.
In all this, Pollan insists that you have to save yourself. And he makes a good case why. Our government, he says, is so overwhelmed by the lobbying and marketing power of our processed food industry that the American diet is now 50% sugar in one form or another --- calories that provide "virtually nothing but energy." Our representatives are almost uniformly terrified to take on the food industry. And as for the medical profession, the key moment, Pollan writes, is when "doctors kick the fast-food franchises out of the hospital" --- don't hold your breath.
"You want to live, follow me." I loved it when Schwarzenegger said that in "Terminator." It matters much more when, in so many words, Michael Pollan delivers that same message in "In Defense of Food."

The Complete Idiot's Guide to Vegan Cooking Review

I love the style of cooking in this book: relatively simple recipes, most often with everyday ingredients; well written instructions; and a focus on whole foods (including the use of whole grain flours and unrefined sweeteners whenever possible). It is packed with recipes, 240 to be exact, so there options for new vegans (how to use tofu and seitan, for example), and vegan veterans who want wheat and soy-free recipes that creatively incorporate fruits, vegetables, nuts, and whole grains. That said those who are coming from fast food territory will still be welcomed by the author with some shortcut recipes for things like Tofu Dog Bites.
I have reviewed The Complete Idiot's Guide to Juicing (thumbs up) and The Complete Idiot's Guide to Total Nutrition (a disappointment), so I am well aware of the cutesy "Idiot's" format that some may love, some may feel neutral about, and some may be irritated by. At this point, I am pretty neutral, and able to look into the actual substance of the book.
The book starts with an informational section that is about 25 pages long, but it feels fairly complete for its purpose. Beverly touches on health needs and then dives into explaining milk and meat alternatives. Later in the cookbook is a chapter that is dedicated to making your own cheese and dairy alternatives.
Since I am already dairy-free, I chose to sample a recipe that also had a meat substitute vibe, the Savory Mushroom Sausages. The only changes I made were to cut the maple syrup in half (down to 1 ½ teaspoons) and increase the salt by ¼ teaspoon, as we aren't fans of the sweet flavor that many breakfast sausages have. They were awesome! I actually preferred the leftovers, after chilling overnight, as it really gave the various flavors time to meld. This was a soy-free and optional gluten-free recipe too!
I bake my own granola, so I was excited to trial the Vanilla Nut Granola recipe. It used a very different mix of spices, extracts, nuts, and seeds from my standard recipe. I really enjoyed the subtle sweetness and the very nutty tasting blend. All of Beverly's recipes are very easy to customize, so on the next go there are a few personal touches I will introduce. I think swapping the maple syrup for agave (which is half the price in my neck of the woods), and leaving out the pecans (which tended to burn easily) would make it an ideal blend for my household, adding just a slight touch of additional sweetness. Also, she ingeniously uses a blend of oil and water to keep the granola low fat, but we aren't calorie counters around here, so I will probably use all oil next time for a firmer crunch.
I loved the Carrot-Cashew Butter, a simple and thick spread with a light natural sweetness from the two main ingredients. I was also smitten by the Low Fat Miso Ginger Dressing. It was only my second time using miso, and the experience prior left me with a bad taste in my mouth, literally, but Beverly nailed it in the sweet, ginger-rich condiment.
This is definitely a cookbook that will get some mileage in my kitchen. Recipes that are next up on my list include the Maple Pecan Oatmeal Scones (made with rolled oats!), the Thai Peanut Sauce (I can never get enough of that stuff), the Raw Cheddar Cheese Spread (soy-free), the Raw ABC Nut Milk, the Red Lentil Bologneses (I am on a lentil kick), and the Blueberry Corncakes (a twist on traditional pancakes). But don't stop with my selections, there really are tons of different recipes to pick from in this one, from "Decadent Desserts" to "Marvelous Main Dishes."

The Complete Idiot's Guide to Vegan Cooking Overview

Delicious recipes for the growing vegan lifestyle. There are so many reasons to go vegan—health and nutrition, weight loss, green and sustainable living, and prevention of cruelty to animals. With over 200 mouth-watering recipes and tips for converting meat- and dairybased dishes into vegan ones, The Complete Idiot's Guide to Vegan Cooking will help readers enjoy a healthy vegan diet without sacrificing taste.

Eating Animals Review

The buzz about this book was so incredible I had to get my hands on an advanced copy. The book is like nothing else ever written on the food industry. It reads like a novel, is funny, incredibly well documented, and lets factory farmers and animal activists speak in their own words. I've read a lot of books on the food industry and this is by far the best. It makes other writers, even Michael Pollan, look a bit timid. Foer never preaches. He shares his own beliefs and asks us to live by our own standards, not his. Foer reveals a lot of personal information here and, since this is his first nonfiction book, it its especially interesting for readers of his previous books to see some of the fact behind his fiction. The material about his grandmother and how she survived the holocaust is really powerful. The stuff about his dog George (Foer makes a mock case for eating dogs) is hilarious. His storytelling is so compelling that you hardly realize how much information he's conveying (there are 60 pages of notes documenting his sources, but the text itself is uncluttered by footnotes). Another unique thing about this book is that Foer actually sneaks into a factory farm in the middle of the night... Eating Animals is a serious book that could change the way you live. But what's most impressive about it is that it is also fun to read, which is exactly what we need on a hot button topic like the contemporary food industry.

Appetite for Reduction: 125 Fast and Filling Low-Fat Vegan Recipes Review

I like "Appetite for Reduction" because the author gives nutrition info for each recipe which is a first and unlike her other books. It is also a more health conscious collection of recipes and is exactly what I've been waiting for. I own all of Isa's & Terry's other books and I guess I would consider myself a fan by now. I usually stick to a healthy and nutritious diet under a certain number of calories per day, and I had to choose carefully which recipes I'm making in their previous books. But looking through "Appetite for Reduction," there really are no questionable recipes for those who wish to eat healthy. Everything is healthy here, and it doesn't skimp on flavor at all. I'm marinating the tofu from one of the new recipes right now...Masala Baked Tofu. Very simple and I can't wait to taste it!

Appetite for Reduction: 125 Fast and Filling Low-Fat Vegan Recipes Overview

This is not your mother's low-fat cookbook. There's no foolish tricks, no bizarre concoctions, no chemicals, no frozen meals…no fake anything! Appetite for Reduction means cooking with real food, for real life. (Skimpy portions need not apply.)

The Happy Herbivore Cookbook: Over 175 Delicious Fat-Free and Low-Fat Vegan Recipes Review

Meeting Lindsay on Twitter shortly after deciding to go Vegan was one of the best things that ever happened to me and I was really excited when Lindsay chose me to be one of her testers for this cookbook. Newly vegan I wasn't sure where to start. Lindsay introduced me to new foods with her creative, easy, few ingredient recipes.
I thought Chickpeas were something you sprinkled on salads at the salad bar but Lindsay has some really tasty recipes with them. I used to make Tofu Scramble with tofu, oil and a box mix. No oil, some tofu and a few spices add up to the best Tofu Scramble I've ever had. Make French Toast without eggs? Lindsay does and it is better than the real thing. Home fries without the fat? Lindsay has it! The BBQ Chop Wrap is one of my favorite all time recipes. I make the single serving brownie almost every week! And don't get me started on her Pumpkin Pie...
Recently I discovered that I can't tolerate Gluten and also had to cut back on Soy - Lindsay's book has many recipes that I enjoy.
Giving up all the fat for flavorful food cleared up my skin and helped me lose weight while feeling good.
I highly recommend Lindsay's book for anyone who enjoys food.

Super Natural Every Day: Well-loved Recipes from My Natural Foods Kitchen Review

Heidi Swanson loves to cook and it shows: her newest book, Super Natural Every Day: Well-loved Recipes from My Natural Foods Kitchen, is a delight. Beautiful photos and terrific descriptions of the recipes and how to prepare them (often with stories and helpful cooking tips) reading this book will inspire you to try many of the recipes.
Most of us wear about 10% of what is in our closet...same with cooking--we make a handful of our favorites over and over again. For this book, Swanson recorded her everyday meals for a couple of years and voila--simple and delicious dishes to enjoy daily.
The book surprises with unexpected pairings like potato salad with tofu. I tried and loved the fennel salad, which features paper-sliced thin ingredients....A simple recipe like the chickpea wrap in whole wheat Lavash flatbread was yummy (I happened to have the bread and other ingredients on hand and made it impulsively...Yum!)
To Swanson, natural food cooking means an abundance of fruits and veggies--local (and organic) whenever possible. Living in San Francisco, she is able to take advantage of the abundance of fresh produce and food from farmer's markets. However, as the popularity of local food grows, many of us can do the same.
Swanson loves to cook with whole grains--I discovered you can actually buy frozen wild or brown rice--but don't bother...whole grains take up to an hour to cook, but need no attention once they have boiled. And, if you are not familiar with wild or brown rice, farro, wheat berries and other whole grains, you are in for a treat!
You don't have to be a vegetarian to love this book--it is literally filled with healthy and interesting recipes that anyone would love! Plus, if you do eat meat and are looking for ways to cut down, this book is a terrific starting point.
Norma Lehmeier Hartie, author of Harmonious Environment: Beautify, Detoxify & Energize Your Life, Your Home & Your Planet

Plenty: Vibrant Recipes from London's Ottolenghi Review

I buy a lot of cookery books, and borrow even more from the library. Most of them are getting quite interchangeable these days. Yotam Ottolenghi's new book however has nothing I've seen in other books. All the recipes are fresh and original, but not difficult or fiddly. I have spent the last few years tearing his recipes out of the Guardian at the weekend, now I don't have to. His recipes work, are full of flavour, and as I said before quite different. An excellent book even for someone who has hundreds of cookery books.

Plenty: Vibrant Recipes from London's Ottolenghi Overview

Yotam Ottolenghi is one of the most exciting new talents in the cooking world, with four fabulous, eponymous London restaurants and a weekly newspaper column that's read by foodies all over the world. Plenty is a must-have collection of 120 vegetarian recipes featuring exciting flavors and fresh combinations that will delight readers and eaters looking for a sparkling new take on vegetables. Yotam's food inspiration comes from his Mediterranean background and his unapologetic love of ingredients. Not a vegetarian himself, his approach to vegetable dishes is wholly original and innovative, based on freshness and seasonality, and drawn from the diverse food cultures represented in London. A vibrant photo accompanies every recipe in this visually stunning book. Essential for meat-eaters and vegetarians alike!

Veganomicon: The Ultimate Vegan Cookbook Review

First off, the food in this book is amazing. Vegan With a Vengeance was super great, but this is the friggin' BOMB!
Aside from the incredible food, the product description doesn't mention that the first part of the book is a great (and funny) read about HOW to cut and prepare different vegetables, how to cook different grains, etc...for someone like me, pretty invaluable stuff. Also cool if you're getting this for your "weird" vegan kid that is just learning to cook.
Also,, the icons are a big help (an icon tells you if you can make the meal under 45 min -or way less, another icon tells you if you can find everything at your regular Vons-type market, if there's soy, etc...)
The other review made a comment about the title, which I think is total genius. Then again, I get the HP Lovecraft/Evil Dead reference. What else could you call the "ultimate vegan cookbook" besides the "Veganomicon"??
Not only does this book have great recipes, but it will totally add ideas to your cooking arsenal. After making the "Black Bean Burgers", I am never buying packaged veggie burgers again!
p.s. do yourself a favor and make the "Leek and Bean Cassoulet with Biscuits".

How to Cook Everything Vegetarian: Simple Meatless Recipes for Great Food Review

Let me start by saying I'm a busy working mom of two. I grew up eating Hamburger Helper and hot dogs, so I didn't learn to cook until I was an adult. My dad's had triple bypass and my mom's having gastric bypass, so we're trying to learn from their mistakes and eat not entirely vegetarian, but definitely a more plant-based diet. I'm sure all this sounds familiar to a lot of people!
How to Cook Everything Vegetarian is exactly the cookbook I've been trying to find for a long time. It has the simple, everyday recipes that I sometimes need, combined with a LOT of wonderful vegetarian dishes from ordinary supermarket ingredients. How about Peanut Soup, Senegalese Style? Or Korean-Style Noodles in Cool Bean Broth (in less than 20 minutes for when the kids are whining for dinner) Mustard Cheese Fondue?
This book is written in Bittman's typical `theme and variations' style, with a basic recipe (like for waffles) and then a sidebar or list following the recipe that gives variations (like a list of things you can add to waffles for flavoring). The great thing about this is that it means you rarely have to reject a recipe because you don't have the exact ingredients, just go with a variant. The only quibble I have with it is, it's sometimes difficult to keep track of what you are supposed to sub out & sub back in when you have a crying toddler on your ankle.
A basic cookbook should also walk you through basic techniques and ingredients. I was a little surprised to see the vegetables chapter was nearly 200 pages. Then I looked through it and realized a lot of that is guidance on how to select and prep the various vegetables. It's also helpful that he includes substitution suggestions - I may be out of broccoli, but if I can make the same recipe with green beans, then I can forgo the trip to the store one more day.
Another nice thing about this cookbook is, unlike most vegetarian cookbooks I have seen, it doesn't rely heavily on unusual ingredients or meat substitutes. It seems like there has to be a happy medium between burgers & fries on one hand and stuff you've never seen before. Surely we can make a healthy diet based on basic veggies, fruit, grains, and legumes, and that's JUST what this book focuses on.
But it doesn't matter how great the book is if the recipes aren't good! So I tried a few. The Spicy Autumn Veggie Burgers (we made less spicy for the kids) were terrific with a dollop of peach chutney, although the kids preferred ketchup. I was pleased at how quickly they came together too. The Glazed Carrot Soup the kids ate without any complaint at all. And oh my the Apple "Fries"!!!!
Because I'm sure people are wondering - yes, he has another cookbook called How to Cook Everything: Vegetarian that came out several years ago. This is NOT just a remake of that slim volume. This is a completely new book. (Why his publishers wanted to do two books with titles the same except for a colon I'll never know.) There's no exact overlap with How to Cook Everything, that I saw - even for recipes like Waldorf Salad, that are essentially the same in both books, there is some slight variation and different text that shows that this was re-written, not just a cut-and-paste job.
In short, I'm very happy with it. I've cooked out of it every day since I got it and I'm sure this will be one of my `go-to' cookbooks for years to come.
